Introduction to Sourdough Bread

Gathering the Ingredients

Before we dive into the recipes, let's talk about the ingredients you will need. For both the partial and whole wheat sourdough bread, the basics are quite simple: flour, water, salt, and of course, a sourdough starter. If you don’t have a starter yet, don’t fret! You can easily make your own with just flour and water. The goal here is minimal ingredients that yield maximum flavor.

Ingredients

For Half Loaf, Partial Whole Wheat Sourdough
  • 170g (organic) unbleached all-purpose flour

  • 113g (organic) whole wheat flour

  • 184g warm filtered water

  • 57g (rye) sourdough starter

  • 10g salt

For Half Loaf, 100% Whole Wheat Sourdough
  • 250g (organic) whole wheat flour

  • 225g warm filtered water

  • 25g (rye) sourdough starter

  • 8g salt

Methods

The process to make these sourdoughs will be exactly the same, only the ingredients are slightly different.
IMPORTANT!!! For this recipe, prepare the dough THE NIGHT BEFORE BAKING!! This will give the dough a long overnight fermentation process, which will break down more sugar and gives the bread more flavor!!

Step 1: Measure and add water and starter; Mix the wet ingredients well.

Step 2: Measure and add the dry ingredients and incorporate everything together. Don’t need to knead the dough. Leave the dough in the oven/microwave or some place warm overnight for 12-16 hours.

Step 3: The next day, once the dough has risen and doubled in size, shape it with a few stretch and fold and the sliding/pulling techniques as demonstrated in the video. About ~5 times is good enough.

Step 4: Put the shaped dough back to the bowl or straight to the dutch oven over a parchment paper. Let it sit for 3-4 hours.

Step 5: Ready to bake!! Simply score the dough and put the dough along with the dutch oven straight into the oven without Preheating!!! The process to heat up the dutch oven actually gives the dough more time to rise and extends the fermentation/flavor-building process! Talking about bonus time and effort saver!!

Step 6: Set the temperature to 450°F (230°C) Bake for 45 minutes and remove the lid to bake for another 10-15 minutes for extra crisps and browning.

Step 7: Let it cool down and enjoy!!
